We just got home from picking 20 pounds of strawberries.  The problem is, I don’t have time to do anything with them today.  Strawberries are so fickle that after being a bit squished in the containers we put them in and just the nature of a strawberry, many of them could well be rotten by tomorrow morning.

So, fill your sink or a big bowl with ten parts water to 1 part vinegar (white or apple cider is fine).  Let them sit in there for a few seconds and then put them in a colander.  Then rinse them (or don’t.  When they dry you can’t taste the vinegar).  In the fridge, I have had them go for more than a week without rotting.  They will actually start to dry out and shrivel before they have a chance to rot.  The vinegar kills the mold spores and some of the bacteria that is naturally on the berries (you can really do this with any berry).
